SHRIMP SCAMPI
Ingredients:
(1) lb of shrimp (without shell or with tail only)
(3) Tablespoons of fresh chopped garlic
(2) Tablespoon of fresh chopped onion
(2) Tablespoons of fresh parsley
(1/2-1) cup of White, dry wine
(1) Cup of chicken broth
(1) Cup of Pasta water
Garlic Powder
Fresh Ground Sea Salt
Fresh Ground Pepper
Extra virgin olive oil
(2-3) Tablespoons of butter
Linguini/Capellini Noodle
Fresh Parmigiano Reggiano
Directions:
Boil water for pasta. Add olive oil and salt. Add pasta and cook al dente. Reserve 1 cup of pasta water.
In a skillet with olive oil, sauté two (2) of the tablespoons of garlic, one (1) tablespoon of chopped onion and one (1) of the tablespoons of parsley.
Add in washed shrimp. Season and sauté until pink. Remove from pan.
In the same pan, add additional olive oil + the remaining tablespoon of garlic and onion. Sauté for 1 min or so, then pour in chicken broth, white wine and half of (1/2 cup of) pasta water.
Bring to a boil, add additional seasoning. Reduce heat, add back shrimp and add in butter. Reserve 1 tablespoon of butter for later.
Add freshly shaved parm and add last tablespoon of parsley.
Taste, and add the leftover butter if necessary.
Mix noodles in with pasta sauce, plus add additional parm if necessary.
